I have been making wine for quite a few years using the "just eyeball it" method. Only had a couple batches not turn out right, those blasted blackberries were tricky.
I am trying to get together all this airlock stuff, and hydrometer and figure out how to use it properly. I am used to just throwing it in a bucket, smell it taste it, add what's needed, and let it go.
