I have just started my first Breezin kit (Black Cherry Pinot Noir) and noticed that the wine stays in primary until day 14 (SG 0.998)and then you go straight to stabilizing. The only other kit I have done there was a secondary fermentaion in the carboy. I have back sweetend this kit to 1.084, will that make a difference? I am all set to just hold tight and wait until SG reaches 0.998 in the primary. If there is any reason I should rack and finish fermentation in the carboy I can do that too. Thanks!!

I actually ferment most of my wines this way. It lets you get more gas out this way and also helps to ferment it dry better as you are not leaving behind viable yeast by racking unless you stir it up before racking. The only time I dont do it this way is with very fragile wine that will brown very easily like apple or pear.

I am assuming you mean that you increased the starting SG of the wine to 1.084 and disn't actually sweeten it back up to 1.084- that would be very sweet wine. Just let it finish up in there.

oops...sorry for the incorrect vocab! It makes no sense the way I posted it :) Yes I upped the starting SG. Thanks for the responses. I will leave it in the primary and go from there!
