I racked my Cabernet Novello the 2nd time today. It improved quite a bit in the last 2 weeks. The first racking after adding C+K left behind quite a lot of sediments. I was surprised that now after additional 2 weeks there was still some sediments. The wine still needs 1 more racking and that's exactly what the instruction says (if there is no filtering). 2 weeks ago the wine was quite harsh and had a slight sulphur (?) odor. I'm not sure if it was that but definitely something I wouldn't like to have in the final wine. Today it's gone. The wine is light/medium body, 12.3% ABV, no tannin that I can taste and probably will be quite a good wine in about 2-3 months. Although it's not intended for aging I will try to bottle it in about 3 weeks and age for about 2 -3 months and consume it during holiday season.
