We like to add a little oak to just about everything from strawberry to elderberry to blackberry. Our own taste is to have it way in the background, you almost have to guess its there. Since you are making your own wine its easy to make stuff that you will never find on a store shelf, like oaked strawberry Crackedcork
I oaked some cherry this summer. When I did the second racking I split it into two carboys one with oak cubes & one without. I will be able to compare them in a couple of months.
Lots of oak to the blackberry, will be oaking strawberry soon, apple and tart cherry all got it. Did not oak pomegranate, sweet cherry, cranberry or peach.
