oak in fruit wine??

Does anyone put oak in their fruit wine?

Depends on the fruit?

Just personal taste?

Yes, depends on the fruit AND personal taste. So far, the only fruit wine I oak is elderberry. And it is AWESOME!

I intend to try oak with blackberry at some point and I have a batch of concord/elderberry/blackberry aging that I will try oak in a portion of.

The ability to experiment is one of the kool things about making your own!
 
We like to add a little oak to just about everything from strawberry to elderberry to blackberry. Our own taste is to have it way in the background, you almost have to guess its there. Since you are making your own wine its easy to make stuff that you will never find on a store shelf, like oaked strawberry :):) Crackedcork
 
I oaked some cherry this summer. When I did the second racking I split it into two carboys one with oak cubes & one without. I will be able to compare them in a couple of months.
 
Lots of oak to the blackberry, will be oaking strawberry soon, apple and tart cherry all got it. Did not oak pomegranate, sweet cherry, cranberry or peach.
