Or whether we are going to top up, not top up, or use a headspace eliminator.

Or use bentonite, or not.

Or use fining agents, or not.

Or bottle portions of some vintages in 375's for sneak tasting or not.

Or bulk aging in barrels or not.

Or bulk aging for what specified amount of time.

Or whether or not to degas and how to accomplish it.

Let's not even talk about blending.................
 
Well, I tried..

I went to the wife. Here is how the conversation went..

Me: I love you honey.

Wife: I love you too dear.

Me: Oh really? How much do you love me?

Wife: OK, what do you want?

Me: Well, how about the oldest winery in the world?

Wife: How much is it?

Me: It really is a bargain and this is the first time it has been on the market in 1,000 years.

Wife: HOW MUCH???

Me: Just think about how cool it would be to have a long established winery in a prestigious French wine region..

Wife: HOW MUCH???

Me: only 600 or 700 thousand euros..

Wife: remember that tomorrow is trash day and you need to take out the garbage...

we’re guessing you can pick up this magical piece of history for about 7–10 million Euros…
