I just got my kit today. First try at making anything besides Coffee and Tea. I can't believe what I just did. As my wife and I were making Cherry wine from a Vintners Harvest Fruit Base, the directions said to make a cup of water with 5 tsp. of Bisulfite. Not re-reading the directions, the wife said, "Pour it in!". I happily obliged as I could taste the savory Cherry Wine already. My question is, "did I like totally Nuke this batch, or is there any hope of it just majically fixing itself through evaporation, or will it kill us if we continue?

You are not the first one to make this mistake.....This way too much K-Meta to add to the must...may not be able to salvage it, but lets let some of the other respond before you dump it.....

What size batch were you going for? A 5 or 6 gallon batch would mean you used 20 times too much. A 3 gallon batch would be 60 times too much. Honestly I would start over again so you don't get discouraged on your first batch when it turns out badly.
 
I just ordered and received a can of Vintner's Harvest cherry myself.

Those sulfiting directions can be easily misunderstood. So don't feel bad.

My guess is that it will be very hard to get yeast to ferment it now. But wait for more experienced advice than mine before you dump it.

Consider it a learning experience and move on. Just don't give up. You'll be making awesome wine before you know it.

BTW, the VH cherry is not very highly rated as a standalone wine. I got mine to blend with VH black currant. I plan to make both as a separate wine, and blend them just before bottling...

Stick with it.

Thanks for the prompt and courteous replies! Others have warned of wine meltdowns, but I was sure hoping it wouldn't be my first batch! Thanks to Chopper for the stand alone info on the Cherry wine. I had begun to wonder if I should mix it, and prolly wuuda eventually.
It was a 3 gal. batch. 60 times too much ain't that bad is it? :^O. Ok, thanks to you guy's, Im about over it. I will not get discouraged. I'm looking forward to my next batch, canned Chicken wine. j/k
