My orange wine turned our fine at the beginning, it was indeed delicious, but the following batches seemed to be more sour and a bit too bitter. I used the same orange species but the oranges I used in the last few batches were not as fresh as the previous ones. Maybe that is the reason for sour and bitterish taste.
Anyway, I will try to make more apple wine than orange wine in the future. Apples are in abundance here, in central China, and affordable.

The wine turned out to be extremely palatable, just next to perfect (some batches, I mean). Then I began experimenting on other batches and they turned out to be inferiour. Otherwise I love orange wines. I cleaned the white pith but not absolutely all of them. I like bitter taste and the little amount of the pith gave the wine even more attractive taste. Everybody enoyed it.
Another thing is that I let the oranges through a blender, though I think the blender will overdo it. No need to process the membranes and the tiny seeds at all. My latest batch should be different, I used my hands to squeeze the juice out, no blender or juicer any more. I will let you know the difference as soon as I taste it!
Have you ever tried grapefruit wine? I am thinking of making some.
I agree, 17% is too strong for a good wine! But some of my friends don't think so, ha ha. Has anybody ever made grapefruit wine with the seeds in the must?
