I posted a YouTube link some time back in which an Italian grandfather passes on the tradition of old world wine making to his grandson.
A few days ago I found the resulting taste testing of the wine they made.

Interesting that there's no discussion of sanitation, or even cleanliness, let alone the state of the airlock and bung. It looks like they're just stored on the floor. Dirty boots to stomp the grapes? It's fine. No additions of anything. Natural fermentation, no talk of kmeta. Basically just squeeze and store. I'd like to try it.
 
Glad you enjoyed the videos. They give another slant to traditional wines. I've been a winemaker for longer than I care to remember but have always followed "modern" sanitation practices and venting methods. I have an Italian neighbor who has tried to talk me into his old world style but just can't get the gumption to give it a try. "Stomp & Store" - Maybe one day!
