13 pints canned Bartlett pears from moms yard
30 lbs Bartlett from smiths $1/lbs frozen for 3 days
2 lbs sunmaid raisins
2 tsp acid blend (what should the TA be? I will check tomorrow)
3 tsp pectin
8 lbs to start with 1 tsp lemon to invert (I hope this is not too much. I will check tomorrow)
4 gallons water I think the canned pears had about a gallon of water.

I checked my TA this morning it is .38 is this high enough or should I add more acid blend? How much? I did 2 tsp acid blend and 1 tsp of lemon in the sugar. My SG is 1.090.

You'll probably want your acid around .6... but you can add this at the end, if you want. Then just add to taste. It will liven up the pear.

Good Luck! I hope I get to make some this year. I've had several from other people and I like the mouthfeel and delicate flavor.
