When I harvest my Brianna grape next month I would like to make some of it into pure non alc. juice, ( for the kids) do all the same rules apply that we use for wine with the excepton of the yeast, sorbate?..sulfite?...sparkloid?
 
you will have to sulfite it so it doesn't grow any wild yeast.
 
Rob I do not know for sure but thinking about it I would think you would still want the sulfite to protect the wine. What about wild yeast getting to it...lucky kids!
 
Soooo- pasturize it would mean boiling at 165 degrees???
 
Freeze it in small increments.
Simmer it to pasteurize it and decrease the water content.
Sorbate and bottle.
Add yeast and bottle into a champagne and make sparkling juice. Knowing the amount of sugar would be crucial tho.
