It calls for defrosting berries and let it sit 3 days at room temp with sugar and cambden tablets. I am doing that but I did not read the sugar part. I will do that tomorrow.

I have reservations about leaving it out at room temp. My room temp is between 65 and 69 degrees.

My strawberries are in a covered (towel) fermenter in a underhouse wine cellar (crawl space big enough to walk in.

Should I worry about spoilage during the three day period.
 
if the berries where previously frozen I dont think you need to soak. If fresh berries I would still set in a fridge to soak.
 
Let them sit in the vat until they come to room temp. How long it takes is dependent on how many strawberries you have. Stir them around to get them to thaw a little faster. Be sure you have enough campden in them and they'll be fine.
 
unless you have bugs in a under house wine cellar, with just a towel I would worry... I personally would take them in the house.
 
Has anyone tried this recipe? I am still searching for a strawberry recipe......
 
I just let mine thaw to room temp. They were in gallon freezer bags that I put in my drink coolers, leaving the lids open. It did take almost 3 days for them to thaw completely, which is probably why he's talking about 3 days.

I did not add k meta or Campden at that time, but then I did not add sugar. I would suppose you'd have to have the k meta if you added sugar to prevent premature wild fermentation.

I added sugar at the must stage.

sammyk, here's the common ingredient list for a strawberry wine recipe. The fruit prep varies, but this ingredient list seems to be real popular.

6-8 lbs fresh strawberries
2 lbs sugar
2 tsp citric acid
Water to make 1 gallon
Wine yeast (I use 71B-1122)
Yeast nutrient
