I've got a Selection Estate Pinot Gris that was started 1/3/09 and been in bulk storage since 2/3. 2 Questions:


I know whites mature faster, so will this be drinkable by mid summer:


It also hasn't been droppiong any lees since I transfered to bulk age....Do I still need to transfer again in 3 months, or should I go straight to the bottle.

Is the wine clear at this point? If so I would rack it once more and make sure the gas is out, let it age one more month and bottle it if no more solids drop out. Then it should be ready for drinking by June or July. It would still be young but very drinkable and would be better by next winter.
 
I also like (make) Pinto Gris/Grigio. Appleman also has some good info. Wait for 3 months and I bet you will see some "light stuff" on the bottom. That you want to leave behind. If you see "stuff" in 3 months transfer and degass if necessary.

I always ck and see if I need to degas prior to bottling.
