I started the bulk aging process about 20 days ago... I already have a ton of lees/sediment on the bottom of the carboy... should I re rack it and get it off the sediment?
I usually will rack at 4 to 6 weeks if there is a lot of sediment and again at 8 to 12 weeks if some sediment appears again, adding more K-Meta at this point......Good Luck...
