I've done several wine expert mist kits and I just started a strawberry breezin kit. The instruction are very similar, The mist kits have you racking after 5-7 days or 1.010 and the breezin kits says 14 days in the primary. Has anyone racked one of these breezin kits early then after the two weeks pick up where it should be with the clarifiers. I'm doing a mist kit that I started the same time and was going to rack both the same day and be done with it. I think it would be fine to just rack it early as long as the sg is where it should be but I'm just making sure.
 
We've done a bunch of IM kits but only recently done one Orchard Breezing. My theory on kits is to always follow the manufacturer's directions. They have spent thousands of hours perfecting their recipes and instructions to make them fool proof and to give the best results. I always felt that deviating from the directions creates the risk that the wine might not be as good as it would be following the directions. That being said, I'm sure it would turn out okay if you made it by the IM instructions but I would always have this nagging fear that it could have been better but that's just me.

Yes I have done many of the OB kits following the IM style instructions. In fact, the OB instructions were that way until about 2007.

Wonder why they changed them if they were the same. I'd imagine they have a reason for it. Maybe to make the kit easier for the new wine maker by sorta removing a step.

That was apparently the reason, although I don't think RJS ever said it.

Keeping on the lees (ob) allows for a faster ferment (total 14 days for OB vs 15-17 days for IM).

Racking off (im):
1) Less solids for the clarifying agent
2) Reduce the risk of off flavors from the lees.
 
They're both dry at this point that's why I was asking. I just racked the mist kit and left the breezin kit in the primary for now. I guess I'll follow the directions like a good boy.
