I am starting WE Reisling ice wine Saturday for a gift to a sweet wine lover. I have never even tasted a Reisling. Any suggestions. I'm not scared to tweak it up a bit just dont know where to start.

Tony I've made Riesling and Ice wine but never from a kit. I have heard good things about it though as several members have made it. I don't think I would deviate from the instructions. The one thing I would sugeest is to start looking for ice wine bottles as they are expensive (about $25.00/12 bottles). Hopefully Wade and Cpfan can jump in here with ideas.
 
i have made the WE riesling ice wine kit in the past....a very fine product for sure....and i also agree, just follow the directions with this one...my only criticism is that to me, it was lacking a little acid, but then again, most riesling ice wines i have ever had were more like drinking a a syrup...a heavier mouthfeel, almost chewy, and rather viscous, and this kit is right on point with that, so just do what the directions say...
 
I made one and followed the kit instructions all the way except when to bottle. I gave it a little more time bulk aging. I will say that it is probably the best wine on my shelves right now.

i know when i made it, it was an instant hit, so i agree, it was one of the best....heck, my mother keeps asking when i'm gonna make it again....lol...but considering that one isn't the cheapest, especially considering the 3 gallon yield, not really sure when....but yeah, i will admit, in the long run, it is cheaper than paying 30-80 dollars a bottle for 375 ml of store bought...lol...
 
Is this kit (and the others ya'll have made) the 7.5 liter version? Just curious as I think the port wines in this series are 12.5 liter kits. Adding 4-5 liters of water to an ice wine sounds a bit strange at first but I guess the people at WE know what they are doing.

It's the 12.3 Ltr.
 
I have this WE Riesling ice wine fermenting. It is in day 3 and SG is 1.08. Instructions said it should have taken 5 to 7 days. So I followed instructions and racked to secondary. Now it says it should take an additional 10 days to get to 1.060. It's still fermenting like crazy and I'll bet it gets there in another day or two. Then I'm to stabilize and add the F-pack finishing SG to be 1.055-1.065. If I leave it in secondary for ten days I expect it will be much lower than the target 1.060. So should I go by the SG target (as I usually to) or days. And if I add f-pack at 1,060 woln't run the SG back to the 1.100 range rather than the target 1.055-1.065? I'm very confused!
 
Id let it go down as far as possible which is what you should always do anyway. Never try and stop a fermentation unless you have the means to sterile filter it. These kits are so freakin sweet its riculous usually so a little more alc and less sweetness is what Id rather have any day. I havent made this exact kit but have made a few W.E ice wines and mine did not clear with their fining agent even after adding a 2nd dose per WE recommendations, in the end I had to use Superkleer for a 3rd fining which worked good. I dont ever use the WE fining agent anymore. I try to let it clear on its own and if not I use Superkleer.
