I have a Question about the instructions:

MM Renaissance Cabernet Sauvignon Chilean –
The instructions have 5 steps

At the end of step 2 - Secondary fermentation it says
“Leave the carboy in the fermentation area for the next 6-7 days.”
At the beginning of Step 3 it says
“After approximately 10-12 days, the specific gravity of the wine should .0996 or less.”

So how many days do I leave it in Step 2 before going to Step 3?
I know the longer time is probably the right answer but I just would like some input from you guys.

I think when they say "after approximately 10-12 days" in step three, they mean 10-12 total days. I can't remember, do the instructions say that step 1 should take like 4-5 days?


Either way, as long as the SG is stable (same SG reading for a few days in a row) and under 1.000, I think your good to go for the next step, though it won't hurt to let it sit a bit longer if need be or if you're like me and lazy. :)
 
I have not made a MM kit yet, so I went to their website and found these instructions:

Renaissance unlimited edition 16L

They seem to be a little more straight forward than what you quoted, Scott. If these instructions are appropriate for your Cab kit, it sounds like you need to wait until day 20 to ensure fermentation is complete.

Thanks for the link. The instruction at the website are a bit different than the one that came with the kit. Different SG numbers and Different waiting time on all 5 steps.

I think you are correct. Step 1 says 3-5 days step 2 says 6-7 days. so total days into the kit would be 9-12 days. For step 3 the SG needs to be .966 or lower.

Also, Scott, I think there is a benefit to the wine to sit on the fine lees for awhile. It supposedly helps smooth it. If it were me, I'd go ahead and wait the full 20 days before proceeding to step 3.

Sounds good to me.
I am planning to bulk age it. At the end of step 2 (20 days) I will rack it to another carboy, add the potassium metabisulphite and let it sit for 90 days.
 
Sounds like a winner, Scott. After 13 kits I am finally extending the times a bit so that I will be bottling on day 90 or so. I expect to see some very big improvement from this tactic.
