I have this kit sitting in a carboy since 2/3 with 1/4 tsp. of K-Meta. Is That long enough to age this white wine, I would liek to drink it this summer but don't want to rush it. If so, before I bottle it, should I add any more K-meta.

Thanks

You could certainly bottle it any time now as long as it is good and clear. I would add a final 1/4 tsp of k-meta before bottling. Most of the free S02 would be gone before getting into the bottle. It will age better. If you bottle now and give it a month you may be able to start drinking. It depends on your expectations. If it tastes really good to you, it doesn't matter if it is 6 months old or 16 months old. It's your wine.
