Just purchased a new Selection Sauvignon Blanc. After opening the juice bag, the juice in the bottom corners of the bag seemed more concentrated and had a brown color. Seemed like sedimentation but surprised me and I hadn't seen that before. It came with two yeast packets EC-1118 and K1-v1116 and I added both.
After 5 days of very active fermentation the top of the juice in the fermenter was covered with thick light brown foam. It smelled fine. The sp. grav. was .996. I racked it into a carboy but racking was not very "clean".
After racking the juice it has very active fermentation and foam forming on top.
Does the sedimentation of the juice concentrate sound normal? Is the thick light brown foam normal? Should I rack it off again before stabilizing and clearing? The kit says not to but there is already a lot of lees in the bottom of the carboy since the initial racking wasn't too clean?
