In addition to my better quality wines, I fool a lot with welches frozen concentrates. Its cheap and I get to experiment with flavors, body, and ingredients.
I have learned a bit about using bentonite in the primary by doing this. I will admit that last month, i messed up royally while attempting a false wine from apricot and raspberry pulp .
As far as the welches goes, these simple wines have been consumed while young.
I am about to make a small batch of white for a friend. I expect this batch to yield 7 or 8 750 ml bottles. I will give him all 7and ask him to drink one every 30 days or longer to try to see if aging improves the simple juice wines.
