Storage of Large Quantity of Honey

This may be a question bettered suited for meadmaking, but I wanted to ask a broader audience. I have recently begun substituting honey for sugar in many of my fruit wines to add body. I found sources for 60 lbs of honey for $95-100 plus shipping. I am contemplating ordering a large quantity of honey to use in small doses of 6-12 lbs per batch of wine. Over time, will a 60lb container of honey oxidize or suffer other ill effects if the honey container is less than full?

If you want to limit the air exposure to the honeyin the container you can placea sheet of plastic wrap or waxed paper on top of the honey to helpseal it. Or buy some inexpensive 1 gallon containers and filland they are sealed tight and pre-measured ready to use.
 
Good idea Masta. I will pull that one gallon container I received from Abigail's Honey out of the trash, clean, and save another set of containers. Does anyone have a spare room?
