I just spent the last two hours completing three A/O tests on my MM Chardonnay del veneto. After all the test the results was 43.2 ppm of free SO2. The PH is currently 3.0. I feel very comfortable that the test were successful. It took 2.75ml, 2.6ml and 2.75ml of NaOH to return to the starting point.

So my conclusion is the free SO2 should be about 15 on a white wine with a ph of 3.0 and with all the ingredients in ... if I was to bottle right now I would roughly have 3 times more free SO2 than I need.

here are a few pic's

While test is running ...

It was very clear when it changed to grey ... one more drop and it was a bright green

Welcome to the Chemistry club! Nice job. That amount should hold you for the life of the wine easily.

Thanks ... man that was tough to grasp ... last night I wanted to throw it all out the window. Tonight I took it slow and easy ... and everything clicked.

I appreciate your help.
