I uncorked two bottles of muscadine. One was bottled 12-24-08. The other I oaked with Heavy toast hungarian for 1 month. I bottled it on 2-7-09.

Now I know its probably way too early to even be doing this, but temptation got the better of me, I actually think its hard to decide which one I like better. The unoaked bottle is pretty good. The oak has a nice smokey taste that I think will really be good in the future as it mellows and blends further. I think I will not open another bottle of the oaked for at least three months to see how it develops.

But I must say they are both tasty in their own rights....................

SWMBO made me blend a glass of both to see how it was. It was very smoky tasting. It was as if the other batch had been oaked too.
 
Did you feel likethe oakiness overwhelmed the flavor of the Muscadine or enhanced it?
 
I think it overwhelms it somewhat, but I hope that it will tame down and blend over time. My wife loves the smokiness of it.
 
Was this the Carlos? I decided not to oak mine, well actually I just got the oak and decided to try it with a tropical fruit Carlos that I'll start soonish. I'll be using a light oak on that batch, hoping to add a coconut aroma to the wine.
