I'm on my sixth kit. #1 & #6 both RJS VdV Pinot Noir kits. Unlike kits 2-5 fermentation with this particular kit has been slow to start by comparison. These kits seem to take 2-3 days to be bubbling to where the others have been after about only 24 hours. I'm wondering if this is just coincidence or is there something about Pinot Noir juice/concentrate that would explain this apparent difference in early fermentation activity?

BTW, kit #1 turned out just fine. Starting SG for both kits was @ 1.080. Unfortunately, being new to this wine making stuff, I never took another SG measurement with kit #1, just went, on day 14, from primary bucket to carboy for degassing, stabilization & clearing.

Temperature?

It has been about the same for all 6 kits, around 70-74 degrees.

The Pinot Noir kits do have powdered oak added into the primary, could this explain the difference? [Full disclosure... I do have an RJS WS White Merlot bulk aging but can't remember if it had oak in addition to the grape skin pack added to the primary.]

Anyway, not a problem just curious as to what might explain my observation.
 
I always add some yeast nutrient to a wine kit although not called for in instructions Never hurts to help the yeast. maybe the case here.
