Time between K-meta/ Sorbate , sweet adjust, and bottling?

Hey folks,
Quick question. Is there a recommended time limit between k-meta / sorbate addition (already done and in fridge) and adjusting for sweetness and bottling? I have 2-one gallon apple wines, and 1- 6 gallon apple-raisin cyser. I'm hoping to be done w/in a week, but is that too long for some reason? Thanks all! Chris
 
No problem at all. If you wait several weeks or longer, I would double check the SO2 levels before bottling. The sorbate should be fine.

Thank you! This is very reassuring. Is there a simple check for SO2? Also, as a 'bonus' question, my 6 gallon cyser never got 100% clear. It has been racked for 3 years, airtight. Is this a problem, do you think. The taste is not off (it's super dry) but not off at all. Advice?
