In my experience, some will finish about 1.000, some around .995, and others around .992. And it doesn't matter what the instructions say, reality can be different. You need to be sure that fermentation has stopped, and not just it's in the range that the instructions mention.One brand of kit (that I have made many many times) finishes at .992, and the instructions say '<.995'.Steve
