Too much cincentrate?

Is it possible to use too much frozen grape concentrate? I made a batch of what I thought was going to be a mock chianti (Scotty's recipe). He calls for 12 cans but I had 20 cans so I used it all! It sure doesn't taste like chianti so I oaked it! Still not very good so I mixed it with some cranapple grape wine that I had made earlier. Wonderful taste but still not chianti.

Im sure there is a cut off point in there and that would vary from product to product. Did you Titrate this batch?
