My first barrels; 30 gallon Zin, 30 gallon cab franc. I've been opening up the bung every 3 weeks or so and topping it off. I've measured SO2 and added once, after 7 weeks. I plan on racking after 15 weeks.
Is there a standard schedule to add, test and rack? Am I way off? What are the indicators to do it more or less frequently?
