I am starting my first winexpert kit (white) and have a question about the water.

We have well water that taste ok, but you can tell its from a well.

We also have an RO system that we use for drinking and its great tasting water. I was told the yeast may not do as well in RO water though , but I am thinking it may be safer water to use. Also, the water coming out of the tap is 'saltier' due to the water softener.

Any recommendations?

Frodo...RO water is just fine. It's what I have used for many years including 6 years running a Ferment on Premises.

I use to RO water for beer as a bit of salt wont hurt anything. My well water is drinkable but you can taste some mineral in it. For wine (and drinking) I use an under counter carbon filter that does a great job.

There in no salt used to make RO water. The RO is a membrane system with two pre filters one that is paper catches general and one that is carbon takes out tastes then the RO membrane that only allows a certain size through. That must be a water softener. Do not use softened water because of the salt content you will taste salt in your wine.
