Okay, I'm back from vacation and ready to start some new wine. I bought a can of Vintner's Harvest Black Currant before I left and I would love some ideas about what to do with it. I've read all of the posts here I could find on the topic but haven't decided which way to go (simple black currant recipe or blended with something else). Does anyone have a wine they've made with this stuff that really just bowled them over? Also, if I just go with a straight black currant wine, how is the 5-gallon recipe vs. the 3 gallon? Is there anything you feel should be added to either recipe to really make it great?

We generally like drier red wines here, although I also appreciate a semi-sweet fruitier wine. Any advice on finishing?

I used Northwest's recipe, 1 can of the Black Currant and 2 bottles of Winexperts Red grape Concentrate (this was before they started selling it in the 1 liter bag), tossed some raisins in with lots of oak. It's still bulk aging and I have not tasted it in a while but it was pretty good. I'll get another taste when I bottle some time in November or December or even January. If you search the forums Wade also has a recipe that he makes often.

I found NW's recipe http://www.finevinewines.com//Wiz/forum/forum_posts.asp?TID=5608 and I used 71B yeast this time. Next time I'll use montrachet just to compare.
 
Thanks! That sounds delicious - I don't know why it didn't come up in the searches I did but I completely missed that recipe.
 
I saw your post about that, Wade. How did you modify the 3 gallon recipe? Also, if you've made the 5 gallon recipe how do the two compare?
