I bottled 28 beautiful bottles of this wine today. My only concern with it is that the oak flavor is somewhat overpowering. Will this taste diminish/improve with aging? How long should I age the Chardonnay for it to reach its peak?
 
I don't believe the oak will go away Smoke...At best you could make another batch and then blend the two. As for aging, I have never made a Chardonnay but my uneducated guess would be a year for it to begin to reach it's peak.
 
I was afraid that was what you would say. I have some other projects for now so I will wait and do another chardonnay this winter w/o oak and blend the two.
 
Smoke, oak is a good thing (IMHO). However, while the overall oak will probably not diminish, it will mellow with age, like all of us.
 
I am in no rush. I will give it plenty of time and see what happens. It will go in my wine cellar in about 2 weeks.
