I have my plan for backsweetening my Winexpert Vintners Reserve Riesling thanks to responses from my earlier question. As per the kit instructions I added the packets of metabisulphite and sorbate. I degassed and added the clarifier. I will rack the wine after two weeks and then sweeten. My question, do I need to add additional metabisulphite and sorbate or will the amount I added already be sufficient? My plan is to wait one week after sweetening before I bottle. Thanks for any advice.
 
I would wait a month or two after clarifying the wine. this will insure all additions have completed their job and all degassing is complete. after bench trials have determined you addition, do so and add K-meta and sorbate. Your plan to wait a week or better before bottling is wise as any refermentation would occur in that time.
