What do you do about the sediment that lingers on the side?

I've got Niagara/Cherry that's been de-gassed, stabilized and "Sparkaloid'ed" (if that's a word). It's sitting to settle and regain the goodness after the de-gassing process. I looked at it yesterday (10 gals) and it's beautifully cleared but there is very light sediment clinging to the side of the carboys. What do I do about that? Will it simple fall after more time or will it stay clung to the wall as long as I'm careful about siphoning off the lees?

As mine clears, I usually just gently rock the carboy back and forth as I notice a build-up, that helps dislodge it from the sides. I don't generally rock it so much that is shakes it up, but just a few times.

I give the carboy a few quick, sharp twists along the way.

I read about that here. Works great.

Yup a twist and shake just ask Sarah...

Works great. Just be sure to do it at least 2 or 3 days before you rack. That way it will have time to settle to the bottom.

You are not always going to avoid racking over a little of the sediment each time. The idea is that each time you rack, you get less and less sediment.

Alternatively, there have been many threads on here about only racking down close to the sediment and not taking any of the sediment, then saving that sediment in a small, clear, sealed container and letting it settle once more for a week or so. After that you can gently siphon off the clear wine off the top and throw away what is left.

Just before you siphon off the top, smell the container of wine and make sure it smells normal. If not, throw it out. You don't want to add any rotten egg smelling wine to your good batch.

If you use this alternative technique, you will end up using less top off wine and you will end up with 30 bottles from every 6 gallon kit.

Dan I think you need to go directly to the corner Sarah has had enough nightmares

Thanks for all of the confirmations! Sarah definitely got all of the sediment off of the insides of her carboys! Still sorry that happened to you, Sarah.
