Whats on your wish list of wines to make?

I've been spoiling myself lately, Mine is:

Amarone - cannot get enough!
Brunello - I'm addicted to Brunello
Valpolicella - Love it!
Barbaresco - this is a real nice wine
Barolo - The king of wines
Montepulciano D"Abruzzo - This is a great wine to have in your inventory, light enough and just sweet enough that everyone can enjoy it.
Chianti - I want to make a Chianti that is aged 3-4 years as a "Riserva", I recently had a wonderful Chianti Riserva with the "Gallo Nero" the Black Rooster on the DOCG label", it was real nice and smooth, not harsh like some Chianti's that are young and rushed out the door to be sold.
Pinot Grigio - Yep..it doesn't fit in with the past wines, but I made a Pinot Grigio that everyone is just going nuts about!
Moscato - this is a fun wine, you can make it still, sparkling, add extracts to it and have a nice Strawberry Moscato or whatever suites your taste.
~And a tip to anyone that says that don't like the big bold Italian wines, try them decanted for an hr or more depending on the age and type of wine, it may change your mind, it does make a big difference.
 
For me, I'd like to make a red wine from scratch with WI grown grapes. My wife and I did a mini winery tour earlier this summer and tried to focus on wines with WI grown grapes. Found a couple reds that were nice but many that had a bite to them. We had better luck with the white wines.

The ones I liked:
Reds:
Wollersheim - Prairie Sunburst Red, Domaine du Sac
Botham - Field 3, Uplands Reserve
Spurgeon: Wisconsin Marechal Foch

Whites:
Botham: Cupola, Vin 10
Bauer Kerns: Driftless White, Oakey Dokey, Lafayatte County Lacrosse Dry
Spurgeon: St. Pepin
 
Banana Bochet Port - this is going to be my first 'masterpiece'

Blackberry Melomel - this will be semi-sweet / sweet, while I'll be MLFing last years blackberry

Traditional Mead - both sweet/balanaced & semi-dry versions

Vanilla Mead - light on the vanilla, might add some other facets - coffee beans, chocolate, who knows; could end up pretty crazy

Bochet - this will be somewhere between Red & Black, farther than i've pushed boiling honey thusfar; should come out with some pretty intense and complex coffee and toffee notes; it could be partially blended with the vanilla mead, results-depending

Tom (Pumpkinman), I really like your list.
My wish list is:
Amarone and Super Tuscans. Someone on this forum said they would dedicate a carboy on a continuous basis to both CC Showcase Amarone and RJ Spagnols Winery Series Super Tuscan. I agree.
I would also like to try Viognier, Cru select Valp. Ripassa, We Brunello and Mencia if they offer it again.
I am going to make a Moscato for my wife.
The only Barbaresco I have seen in a kit was a limited edition a few years ago. Maybe they will offer it again.
I just picked up one of the wines on my want list: WE Nero D'avola.
I also want to do a double batch of Mosti Modiale's Bodega Port.

I can't agree more on letting your big red wines, (not just Italian), to decant for at least an hour or more. They really open up in both flavor and nose.

I have more of a wish list than I have sense or money.:slp

What Pinot Grigio did you make? My first one was good, but would like to make another this fall.

I'd like to make a Spanish Tempranillo
A good white blend???
A Cabernet Franc
A Meritage.
A Cranberry wine

I would like to make a non-kit grape wine this fall, but not sure where to start.
 
I made the Pinot Grigio from a Juice Bucket, I had never tried a kit until recently, it really changed my mind on how kits can become great wines! I have a Brunello that is going on 2 months in a barrel, it is becoming amazing! I just racked 2 batches of Amarone (Juice Buckets) into barrels this evening, I cannot wait to taste the end results!
I really enjoy making wine from Juice buckets, it has allowed me to experiment with various "tweaks" that I cannot apply to a Kit wine, but I've started to purchase equipment to make wine from fresh grapes. Hopefully by this fall I'll be able to make 10-15 gallons of wine from fresh grapes.
