I thawed a package of pork tenderloin yesterday, and as per my usual, processed it for two meals (2 tenderloins in a package goes a lot farther without hungry teenagers in the house). I use 2 recipes commonly for tenderloin -- one is Traditional Syrian Shish Kebab (olive oil, allspice, salt, pepper) which is for lamb, but works great for pork.

The other is Pork Souvlaki, and it's obviously traditional as it uses soy sauce. 🤣 OK, it's not quite traditional, but it's delicious.

If grilling I chunk the meat, but storm were predicted, so I pounded the meat into medallions.

This actually works well for either situation, as I can pan fry the medallions OR thread them tightly on skewers for grilling.

Both went into the fridge to marinate. The one on the left is black because of soy sauce, while the other has allspice. The left has oregano in it, so up close it's clear which is which.

Mrs. WM81 had a long workday yesterday, and was pleased to come home to Pork Souvlaki:

The Traditional Syrian Shish Kebab is tonight. I won't be grilling, as it was thunder storming this morning, and storms are expected to continue this evening ...

I think I will give this a shot as you have done it. It will be a rare event to have two dinners planned in a row. Often at 5:30 I pull something from the freezer and a plan is born.

I found the Souvlaki, do you have the Shish Kebab's posted?

I think I'll add in a Tzatziki and try a little taste of home, Fazekas style!

I love hummus! Our ingredients are the same, slight difference in quantities. If I use canned chickpeas I'll use that water if it's needed. There's flavor there. If I plan ahead, using dried chickpeas kicks it up a notch.
But seriously, ONE clove of garlic!!??!!?? 😂

I generally go a bit heavy on garlic, e.g., 1 full bulb in a beef roast. However, I've overdone the garlic in both hummus and tzatziki, so I go lighter. Raw garlic can be overpowering.

Note that the garlic I buy is not a 2" bulb, it's more like 4", so a "clove" may be larger than you are expecting.
 
Mrs. WM81 wanted seafood tonight, so we put the second batch of pork off until tomorrow night. The shrimp was simply boiled with paprika, while the scallops were sauted in olive oil with garlic and lime juice. The starch is quinoa & rice simmered in chicken stock and Costco no-salt seasoning.

Masala Dosa is a typical South Indian breakfast. The dosa is made from a fermented batter of rice and urad dal. It is cooked on a hot griddle very thin and crispy. This is one way to serve it - stuffed with potato masala. I served it with some mint coconut chutney and an Indian vegetable lentil soup called sambar.

No kebabs today -- it's been raining cats-n-dogs. The creek on the back of our property is over the banks.

Not that I'm worried, there's more than 50 vertical feet between the creek and the back of the house. If the house floods, the world is ending. Funny story -- the finance company was going to make us get flood insurance. I told the woman that if the creek flooded the house, the world was ending, and they'd not have to pay. She looked again at the map and realized I was correct. 🤣

Mrs WM81 is quite pleased with pan fried medallions. Yet another successful meal.

Great price and those look to have some decent marbling to boot. Our local Kroger has then on sale as well but not as good a price as yours. Looked through them this week and didn't see one that was decent looking or that I wanted to spend over $100 on even at the sale price. If you only want a half or less than a whole the price jumps up drastically to like $7.99/lb. I will keep a look out as they will be on sale through Tuesday.

Ribeye roast on sale at 4.95lb. so I thought I’d give butchering my own steaks a shot. Ended up with 10 plus a 5lb prime rib. Chopped up asparagus, covered with fresh bread crumbs and parm in cast iron. Add a local merlot and you’ve got a pretty nice meal.
