I just racked my apple/chablis to a carboy. It is in the final stage of fermenting and the sugar is very low. It is barely making a bubbles out of the water lock.

On the top of the wine, I've noticed several small (1/4-3/8 inch) round white spots. They seem to be small bubble groups (I think/hope). WHen I rock the carboy back and forth they disapear, but as soon as it settles they come back. Has ayone else ever seen this?

I really don't know what my titrate level is right now. I figure next racking when it settles a bit I will check it, add some along with some chemicals so I can sweeten it up just a touch.

So do any of you ever see small flat bubbles form on top of your wines? This wine was super fizzy when I stirred it twice a day during primary fermentation.....

You are right, and I found that after doing a search... then posting... then it was right there under my nose. After taking a night to ponder, I believe it was carbonation bubbles forming. They seemed to go away and a few new ones appeared. I think if were something serious they would stay.

I was just being a bit dramatic.
