I‘m certain that you could make your white wine as normal, add sorbate, and backsweeten to taste with the same white grape juice to accomplish that.

Yep, that's what I do for my sweet whites. I like to start with an aromatic white juice such as Diamond and it makes a fantastic sweet wine.

I don't see why not. I would suggest back sweetening with frozen white grape concentrate or a mix of that and sugar depending on how sweet you want it.
