Wine making method I have never used

I got some chardonnay concentrate from Home winery and I see that the instructions are like none I have seen. I feel sure it would work but I would like the opinion of you guys, especially those who have made this.

I will be using a half gallon plus a pint and I will ferment to dry.

These instructions say to ferment directly in the carby and leave it in there 8 weeks. It does not mention stirring. I also planned on using fermaid in the appropriate stages.

My only concern with those instructions is primary fermentation in a carboy may result in a volcano. ..

Would be important to keep it on the colder side of the temp range.
 
Methods????????????

SOMETIMES the method doesn't match the outcome and that's a matter of taste, I tried these before PINEAPPLE and BLUEBERRY, blueberry still in the bottle, PINEAPPLE ,I didn't make a 6 gallon batch but brought it down to 5 gallons and add a pineapple alcohol extract to tone down to sweetness. Letting it sit for a while helped adding the extract helped but all in all not my cup of wine.:spm that's just me.:p
