Mosti Mondiale Arrrg Meglioli not clearing AGAIN

I have never done one of these kits but have been interested in trying. I hear the great things about the way they taste after quite some time. I'm wondering with all the clearing issues that you guys talk about, if I were to just Bulk age for a year before bottling, what it basically be clear...

    Cellar Craft Showcase amarone

I was afraid I really screwed up my Amarone today. I was transferring from the secondary carboy to get it off the lees and add KMeta etc, and while I was going through the packets I realized I had an enzyme packet that I forgot to put in. I had already added the K Meda. Call George at fine fine...

I just bottled an EP Super Tuscan. Not bad now, but sounds like I need to give it quite a while. Sent from my iPhone using Wine Making

Cellar Craft How do I introduce more complicated flavors to a kit?

I have one of these SC Yakima Syrahs that's been resting in the carboy for a few months that I've been meaning to bottle for the last week or two. Now you guys are making me want to add some stuff to it and let it sit there little longer. Sent from my iPhone using Wine Making

    Other Oak cubes

Some of the kits, at least celler craft, say to leave the cubes in for about 10 days during the secondary portion of fermentation. The consensus seems to be that they need about 6 to 8 weeks to get full benefit. I guess of course that's if you wants an oakier flavor. Due to carboy space, it...
