    Blackberry - up or down?

you need to press the fruit to get the seeds out. Bladder press or panty hose or nylon mesh will work 6 days into an active ferment. If you have dried elderberries e.g. 1/2 lb to 1 lb add them ASAP.

    Picking grapes before rain comes

same as you or cover with wall insulation mylar plastic. 20 brix is not great but its ok. You can also make a rose from it.

    Fruit fly larvae on blackberries

freezing kills the larvae. Don't boil the berries. Pour sugar on top of the berries and let them soak for 2 days before adding water. Heat destroys aromas.

    The 2024 crop year

16.4% alcohol. Blend it if you want table wine to get the alcohol below 15. It should make a really good port. If you go for port which I personally would use EC-1118 yeast from a starter e.g. on apple juice with nutrient containing vitamin B. Your Foch look really good and should make a killer...

    Dehydrated grapes

I'd ferment with EC-1118 yeast to 18% alcohol (i.e. port style) with 10% by weight water solution so all of the sugar ferments. Then blend it next year to try to get the alcohol below 15%. so it goes malolactic. You can try adding 71B to EC1118 this year but 71B will be overtaken by the alcohol...

    enological tannins vs. oak chips

30 oak cubes per 30 bottle carboy. You can go as high as 45 if you really like oak. Add it at the beginning of MLF and leave it in 120 days. (90 is absolute minimum). French oak is milder than American oak because it is denser and the trees grow more slowly. 45 medium toast French oak cubes...

    Blackberry - up or down?

Add 6 lbs blackberries to 1 Imperial gallon water with 3 lbs sugar i.e. ~3.5 Imperial gallons of water 10.5 lbs sugar to 20 lbs blackberries with pectic enzyme and nutrient. I'd use RC212 yeast. You should get enough wine to fill a 25 bottle carboy or a 15 bottle carboy + 6 bottle Imperial...

retaste: Appearance - inky purple Smell - good rich nose - blueberries, black licorice, cocoa, plums, cigar box, tar Tannin - good Acid - good Flavour - intense, rich. the Cab improves the Petite Sirah by giving it more balance (lower alcohol and higher acid). This is really tasty, rich...

    Vineyard Rodent Control

If you put peppermint oil under the car hood you can keep rats out. They hate the smell of it.
