    I used to not cap, but I built wine shelves into the end of a hallway, wife thought the bottle displayed better with caps, so now I cap. Not a big deal.

    You could try EC-1118 which has a higher alcohol tolerance, but even if that starts it probably won't ferment dry. I'd bet on thinning the mix, but please wait for some more replies before deciding what to do. BTW - Welcome to the forum

    Look, the last several have come in the bag and just in a box. It's not much warmer than the stryofoam, but still cool. This is in 105* South Texas. I get my kits in 2 or 3 days. I have been ordering continuously this year, at least 6 kits since it got hot in June, and I have had no issues...

    I know the advertised size is 5.3 gal, but is that measurement to the neck, shoulder or where? Mainly I'm wondering how much does this fermentor hold. Rated for 5.3 gal but will it actually hold 6?

    @RickC - Unless you are just wanting to wait there is nothing wrong with 77. I'm south of San Antonio and start at least 2 FWK every month, red or white, never an issue.
