    Opening Wine Bags

    I use my wine bottle opener. It’s a cork screw type with a arm that rests on the bottle top, then lever the cork out. That arm works great for prying the caps off the must bag. No need for a second tool in the Winery. Also almost any beer bottle cap remover will work too. Roy

    I just have to ask, Why is it called Skeeter Pee?

    I was told it’s Called Skeeter Pee because it tastes best on a hot summer night when the skeeters are biting and it’s the color of pee! It’s my Mother in Laws favorite wine which she shares with her friends, those bottles are labeled “Lemon Lime Wine”. I use 1/3 lime juice. Roy

    Not sure it was a few years ago. We had an assortment of cork sizes. Found one that fit and pounded it in, wouldn’t fit in the corker. Roy

    We have a similar size bottle. We filled it with our “House Cab” . Now when some says ‘ just open one more bottle’ I bring it out to surprised faces! Never open it, it’s kind of a long term aging experiment. Roy

    Racking and sanitation.

    I don’t sanitize between carboys. Rack only Reds, or whites at a time. Never thought about bacteria in one carboy going into another. But don’t think I’ll change my system. Roy

    Use of K-meta during bulk aging in barrel

    New to barrels, I top off weekly, ok at least 3 times a month. I add K Meta once a month to the barrels, a little less than a 1/8 tsp per 6 gals each month. Been doing this for 3 months now and will break out the SO 2 meter this weekend to see if levels are good. Roy

    What wine are you serving tomorrow?

    We served a 3 yr old Cranberry, a 7 yr old Apple Spiced, 3 yr Shiraz, and a 3 yr old Pinot Noir. After an awesome day I asked each couple what wine they would like to take home . Well 4 bottles of Apple and one bottle of Shiraz left the cellar. Roy

    Wine Making Setup.. Let's see it!

    We took our 4th bedroom which is 10 X 12 and converted it to our winery. Made the closet the wet/production area, plumbing was a challenge but the closet works great. Close the doors and the mess disappears. Also have a work table and storage table. Work in progress but seeing the end. Roy

    Seth, What we did was buy 4 Seville racks. Only had room for 3 side by side so... This was planned, I cut the 4th rack into 3rds with a 4” cut off wheel in a angle grinder. Then found some 1/2” cpvc water pipe in the garage that fit perfectly inside the Seville posts. Drilling holes in the Back...

    I too have Seville wine racks and we love them. I ordered extra and cut them down to 1/3 rds and mounted them to the top of the std Seville rack. We now have racks 8 shelves high! We are in the process of facing the racks with stained oak, will post a pic when we are done. Roy

    Tom, We got our Seville wine racks directly from Seville a few years ago. At that time it was cheaper to buy direct even with shipping from I believe Calif. I also bought extra shelving and cut them down and added them to the top for a total of 8 shelves high. Going to add oak pieces to front of...

    Yes only MLF wines go In the 40L barrels. The 23L barrel only has kit wines in it. Thanks again. Roy

    Thanks John, I thought people kept the wine in their barrels for long periods with out racking/cleaning them. I’ll do that to, except on the MLF Which I’ll clean and sanitize before the next wine. Had no choice on putting the MLF in there. Roy
