    Headspace after primary fermentation.

Thanks Paul - 4.6 liters it is! So a little over a gallon. Which I guess means that if you're just worried about a single carboy or maybe two that are just a little under the neck, then maybe these cheap canisters might be a legitimate option. Smok1, sounds like you use nitrogen? I...

    Headspace after primary fermentation.

Regarding the smaller cans of inert gas like Ajmassa5983 mentions, has anyone done the math to figure out how much volume is in them? The Private Reserve brand says it contains 0.29 oz (8.2g), but what does this equate to in terms of volume (at average room temp and pressure)? Funny thing is...

    What the heck happened??

Ah, nucleation - I'm somewhat familiar with it, but never associated sugar with the process. Makes perfect sense though - thanks for the info! As for the wild/domesticated yeast, I guess that makes sense too. I really don't think the yeast came from my bucket, as I washed it very well...

    What the heck happened??

Quick story with two mysteries I'm hoping someone can explain: This past weekend we picked up 6 gallons of hot pressed Marquette juice. TA was a little high, so I figured out that I had to add about 60 grams of calcium carbonate. I planned on using the double-salt technique of de-acidifying...

    Speidel airlock question

By the way, the first two pictures (and the last) are looking at the top (outside) of the lid. The third picture is of the underside.

    Speidel airlock question

Thanks for the input all, I guess I should have included these pictures in my original post. The manual that came with the fermenter kept calling it an "airlock," but I'd call it more of a screw cap, myself. I may have answered my own question too... I found that a standard rubber bung (I...

    Speidel airlock question

So in other words, keep it screwed on only lightly during fermentation, then tighten it for bulk aging?

    Speidel airlock question

So I just received my first Speidel variable volume stainless steel tank and I have a question about the two-piece, screw-together airlock that comes with it. It appears that, when screwed together tightly, it will completely seal the unit, preventing air from entering and CO2 from leaving. If...

    Spraying Fail... Lesson learned

Thanks again - I'm definitely tucking this info away in my head for future reference. :b

    Spraying Fail... Lesson learned

That's really good information - thanks for sharing. What makes you choose citric acid as a buffer? Logically, it does indeed sound like a good option because it's all just C, O, and H (as opposed to, say, HCl, which contains chlorine). Is that your line of thinking as well, or did you read...

    Spraying Fail... Lesson learned

This is interesting to me because we have high pH water too. In our case we raise the pH of our well water by adding soda ash to the water stream. We have a lot of iron and manganese and the higher pH helps remove it. pH of 8 is really not that high, actually. Plenty of people have higher...

Excellent, thanks again for the information.

    Trellis question

Pleasure to make your acquaintance, wfournier! Lovely part of the state you live in - I love the Pioneer Valley. We're in Hubbardston, not too far away from you. Thanks for the links - that PDF is very informative. I had not heard of Wellscroft before - they're not too far away, so I'll...

    Trellis question

Excellent - thanks for the diagram jgmillr1 and the beautiful picture UBB. I get it now. A few more quick questions for you: 1) Is the top wire the same wire that runs down to the stub? Or is the wire that goes from the stub tied off at the top of the post, and then a separate wire run for...

    Trellis question

Gotcha. So what does your first actual post look like? Does it stand vertical or is it tipped back?

    Trellis question

Ahh, OK, I think I've got you. So I had envisioned the end posts looking a bit more like this: http://www.grapegrowingguide.com/images/trellis.jpg But it sounds like you are using deeply buried short stubs instead of earth anchors. Is that right?

    Trellis question

So 8-foot posts, buried 2-feet in the ground, tipped back, what? About 30 degrees or so? I must say it's good to know that others have used 8-foot posts with success. The few 9 or 10 footers I've found online seem to be very expensive, so this makes me feel better about keeping costs down.

    Trellis question

Thanks Grapeman. Do you mean the type of fence posts used for split rail? I see these at TractorSupply, but they seem to be only 8 foot: https://www.tractorsupply.com/tsc/product/cca-pressure-treated-wood-post-6-in-x-8-ft?cm_vc=-10005

    Trellis question

Our new vineyard seems to be off to a good start. We have the following vines in the ground here in central MA: 100 Seyval Blanc 50 Petite Pearl 50 Marquette 10 Aromello 10 Arandell All seem to be growing well, so it's time for me to start thinking about trellising, and I have a few...
