    No you really can't, but if you have 2 carboys you could split the batch. It will bubble over in a 6 gallon carboy.

    This means the pores in the cork are larger than a molecule of salt. Otherwise the water from the wine would leach out of the bottle and concentrate more.

    Time is relative. The faster you're moving or the closer you are to an object with a large mass, the slower time FOR YOU will be. If you orbited a black hole time will pass more slowly for you than someone who's a light year away.

    reusing screw top and swing-cap bottles?

    The swing top are perfectly fine to reuse. If the gaskets are old and dried you can get new ones. I use the swing top for all my non-wines like skeeter pee, Someone else should comment on the screw top.

    How much are you talking about? Less than 1/4 gallon would concentrate the flavors and up the alcohol. If you're thinking 1 gallon less then I think you'd really mess up the chemistry.

    So right now I ferment in 8 gallon plastic containers. Then transfer to 6 gallon carboys. This works well for small batches and such. But I'm wanting to scale up now. I see a lot of people ferment in food grade garbage cans or large plastic barrels (40+ gallons etc.) How do you guys go about...

    Yes, much like adding carbon to iron. The iron won't be a larger volume but it will weigh more as it turns to steel.

    10 gallons won't make 60 bottles.
