    In my experiment I would probably only bottle a few from each test case, and blend the rest back together. So not really much at risk, other than the increased O2 exposure from working with small batches.

    Wouldn't a lot have to do with the environment in which the grapes were grown? If they came from the heart of a traditional wine growing region, surrounded by traditionally managed vineyards as far as the wind could blow, I would expect them to have very different microbes on them than grapes...
