    I used extra light DME, I did not really notice any flavors from it but the resulting wine had lots of body.

    I used DME on an Orange-Chocolate port type wine. The lady at the home brew shop thought I had lost my mind. It did seem to add body.

    Well Mario is now in the wine cellar filled with hot water checking for leaks. Luigi is in the cellar waiting to be leak checked. I will be filling both tomorrow with a California Petite Syrah, Cabernet Sauvignon and Merlot blend. Its kind of exciting, I've never used barrels before.

I love the remote control but the window gets smoked over and you cannot see through it within one half hour of smoking. Other than that it is an excellent smoker.     It appears that the volcano was about 800 kilometers south of the Curico Valley wine region where our juice comes from. It should not disrupt production there.

    I'm not sure when. I actually thought i would be running some of last falls California wines through them but I have already oaked all of them. I guess i will wait until the Chilean Petite Syrah and Cabernet Sauvignon is cleared then christen the barrels
