    New Granddaughter

Celebrating the birth of my 7th grandchild, Kirra Dickey, just born a couple minutes ago. 9 pounds 4 oz. She shares her birthdate with my late grandmother, my late father and her cousin my 5th grandchild!

    California Grapes

I just received the price list for California grapes. I am so tempted, I've never done fresh grapes but I do have the press and a couple crushers and its killing me trying to talk myself out of it. How many lugs would I need to fill a couple 6 gallon carboys? 5 or 6 lugs? Dang, i wish i did not...

    Wild Cherry?

Duster, Yes that is a choke cherry and is perfectly suitable for wine making. I sure wish I had some.

    Headspace bulk aging

That is exactly why I always buy one extra bucket of Merlot. It is great to top off any red and does not change the character of the topped off wine. Buy a 3 gallon carboy and a couple one gallon jugs to rack down the top off wine.

Hi from Westerly RI & Venice FL

Welcome 2020steve I understand the moving of cases thing. I'm from Pennsylvania and winter in Florida. I really prefer to consume my own wine so generally will take 10 to 12 cases down each time we drive there.

    What R you doing today?

Today is a rainy Sunday so a perfect time to catch up on necessary winery chores. Racked 18 carboys of Chilean reds and washed and de-labeled 6 cases of bottles. The Chilean reds are excellent! This year when I bought the juice buckets, i hit them with a pretty good dose of k-meta then...

    Square bottles for cooking wines

I make several wines just for cooking. I know it has been said you should never cook with wines that you would not drink. I tend to disagree with that statement. I have made wine from Vidalia onions, Garlic and Jalapeno Peppers that i would not want to drink but is excellent for cooking. I also...

    Red Meritage blend percentages

I have a 25% Carmenere, 25% Malbec, 40% Cabernet Sauvignon and 10% Merlot that I absolutely love! Carmenere adds something that i have not found in any other grape. I can pick it out in any blend.

    building a supply

I also have ramped up production to outpace our consumption. I now have nearly 4000 bottles in the cellar and it is very enjoyable to go to the cellar, select a 3 year old wine that you haven't tried yet and have your wife complement you on how good that particular wine is. The downer is when...

    bugs orgy

Japanese beetles emerged today here in Seneca PA. I want to hit them with sevin tomorrow but I watched several blue jays feeding on the beetles. I would rather attract blue jays than spray the beetles. I guess I will just watch for the next couple days to see who is winning.

    Lemon Taste or Smell

I find skeeter pee is best served in a tall lager glass with ice cubes and one half lemon, slightly squeezed then submerged in the pee.

Can I force carbonate THEN bottle?

I have also found that some of the breweries are bottling beer in 750 ml bottles that take a standard beer cap (i.e. New Glarus fruit/sour beers). No fair having access to New Glarus brews! I'm down to 2 six packs of my all time favorite beer, Moon Man! Love that stuff!

    Labeling Party

Homer, mostly I use all juice except for some of my fruit wines like Blueberry and Elderberry. I do hang around a thirsty bunch but most of my red wines will age for a couple years before we consume them. In our part of the country, we all have basements which are really ideal for winemaking...

    What R you doing today?

I had a pretty good day today! It started by firing a long term pain in my a** employee and ended with the birth of my 6th grandchild! I'd make that trade any day!
