    What R you doing today?

I pulled weeds all day, getting the landscaping looking perfect again so that I can leave paradise and head back to gray Pennsylvania for the next several months. I sure hate to leave here but I need to bottle about 100 gallons of Chilean Malbec and Carmenere and about 50 gallons of elderberry...

    Carboy Aging Question

suecasa, great question! Your assumption is correct, the k-meta does go in. Do not put in the Sorbate if you are not sweetening it. The wine should de-gas on its own during bulk aging so no, I would not be doing any degassing at this time. The wine should clear on its own so I would not...

    Mixing Mistake

Adding additional wine will not change anything. I also would not add any additional water to it. Has it fermented dry? it sounds like you are rushing things, When did you start the kit? I rarely need to degas my wines, they do it on their own during bulk aging. I would just taste it, add a...

    Mixing Mistake

What does it taste like? Many lower end kits that I used to make were made into 5 gallons instead of 6. I added water until it reached the sg I was shooting for. It is probably ok and it may be great!

    What's for Dinner?

Smoked turkey, brined for 24 hours then slow cooked for 6 hours on the rotisserie while smoking it with apple wood. Served it with garlic red shinned mashed potatoes and green beans. This had to be the most moist turkey I've ever had!

    Winery size

My winery is also in my basement. I installed a pipe that serves as a conduit to allow vinyl tubing to be inserted and used with a pump to transfer the juice to the winery from the outside of the house. I can do it either by gravity via a siphon or by a pump. I purchased a couple sure-flo pumps...

    What R you doing today?

I'm marinating some nice T bone steaks in preparation for a party tomorrow. T bone steaks, baked potatoes, stuffed jalapeno peppers, steamed veggies and some nice Chilean Malbec and some California Cabernet Sauvignon! A great way to break in the new outdoor kitchen!

    wine juice by the drum

I bought 2 drums of Chilean juice last spring. One of Malbec and the other was Carmenere. the price of the drums was just slightly less than the same volume in pails. this year I have ordered juice but all in pails. Handling is the biggest issue. I had to rig a pump to off load the juice and...

When is it ok to have a bug in your carboy?

clight385, get some glasses, for your eyes not wine, clearly is a bug and not a stone. Still is pretty cool.

OK let's all fess up and have some fun!

I realized a couple years ago that I really preferred drinking my own wine over any of the commercial wines available (at least in my price range). That being said, I discovered a wonderful old vine Zinfandel that retailed for $25.00 that I liked well enough to buy a whole case to take back to...

Stick a fork in Winter, its over in the SW

Spring has sprung here in southwest Florida! Citrus is in blossom, Queen Palms are all in blossom and so much pollen in the air you might want a respirator. I washed my truck the other day, it is white, woke up next morning it was yellow!

    An onion and Garlic experiment

Steve, I had to consult my notes. It seems that all of them were bottled about 9 months after I started them. They probably were ready before that but sometimes I am lazy and don't get around to finishing it.
