    Opened a bottle of this for dinner last night. The lemon flavor is a lot more prevalent after 3 weeks in the bottle. I have to admit the wife and I really enjoyed it.

    That's what I was thinking and hoping. It seems to have slowed down some today. There's still a little blow back into the air lock, but nothing like yesterday. I think I'm going to leave it be for now and see how it progresses. Thanks for the replies!

    My thoughts exactly! I actually checked the SG with 2 different hydrometer's and got the same reading. That's why I'm thinking something has gone awry.

    It's been in the primary for 7 days and the SG was .996. I thought the hydrometer was my friend. Lesson learned!

    Here's a pic of it after 8 hours in the secondary and returning the air lock and bung. It's still foaming/bubbling out of the air lock.

    Racked a island mist kit out of the fermenter today. The SG was .996 so fermentation was nearly done. Noticed it had a heavy cap of foam in fermenter.     Yours probably has even less flavor then mine due to the upfront f-pack addition. I went ahead and bottled mine as is. It is what it is at this point.

    Just opened a bottle of "forza" thats a little more then 2+ years old. Personally I think this is one of the best kits I ever made. I wish it was still available.

    Wine Kitz Adding oak spiral to an oaky wine

    Personally I would leave it in there. I throw a medium toast, french oak spiral in all my reds when bulk aging. It can be in there anywhere from the 3 months to a year. Did you use American or French oak? It's hard to over oak using French IMHO.

    The old instructions make more sense then the new printed ones. I'll be racking before adding the f-pack and bottling.

    Did anyone rack this off the sediment after the 14 day clearing period before adding the f-pack? The instructions say to add f-pack after 14 days, stir well and bottle.     I'll probably stabilize/clear mine around the 7 day point. If you want to wait 10 days or more days, you'll be just fine. At this point when I proceed depends mostly on my schedule.
