    Back sweeten

    If you just want to backsweeten then make simple syrup. It's 2 parts sugar to 1 part water. heat water add sugar whisk over heat till clear. Done. Slowly add till you get the sweetness you are looking for. Then take a reading so next time you know how much to add to get the same taste.

    if it has mold toss it, only the moldy ones. If you can squeeze a pear/peach its great for wine

    I only have 1 6.5 gal carboy. Remember unless you plan on making fruit/grape wines you will have a big headspace on 6 gal kits.

    Remember if you will be making kits they are 6 gallons of wine so #2 is only 5 gal carboy thats usually a BEER carboy So I like #1
