    After bottling my wine I turn the bottles upside down in the box and stack them in my "wine cellar" Those who keep them in the kitchen will spoil the wine as its the hottest place in the home. Why are there wine racks over the fridge?

    Leave it alone. when did you add the yeast and whats the temp. Some wines are fast fermentors some are not. Why do you say its time to rack?

    Yes. I MLF usually for 3 months with oak. (sounds dirty)

    VP-41 is what I use when I do at least 9-10 pails. For 12 gal I wood have used the 1 use pkg. for 6 gal.

    Yes but,once the pkg is opened you have a chance of contamination.

    When doing MLF it can takes months. I do juice alot and for my reds I age them for a year. There is no need for sorbate as the wine will be dry and you will not back sweeten a red. Oh.dont forget to add oak chips

    F Y I. next time you do a fruit wine let the pectic enzyme do its thing. No neeed to "mash" you will not get as much sediment.
